Oleoresin widespread use in F&B industry
Oleoresin is a combination of the volatile and non-volatile constituents of a spice. They are widely used as a flavouring and colouring agent in soups, sauces, chutneys, processed meat products and confectionary. They have high stability in storage and shelf life of 1 year without in loss in quality due to their low moisture content. They require only 1-10% of the space required by ground spices. They are more heat stable than regular spices.
